Fiesta Pasta Salad
Fiesta pasta salad is just about to become a family favorite in your household! Try this refreshing variation on a pasta salad. Fiesta pasta salad is a welcome contribution to summer gatherings when you are asked to bring a side dish.
My Mom came across a version of this recipe in a magazine some years back. The recipe was lost before we could try it, and we were left to create our own, based on what we could remember. The result has become a family favorite.
Ingredients
- Pasta Salad:
- 14 oz Tri-Color Rotini Pasta
- 16 oz Spanish Chorizo or other Sausage
- 15 oz Low-Salt Kidney Beans
- 8 oz Can of Corn or Hominy
- 2 Medium Tomatoes or Grape Tomatoes
- 1 Green Pepper, Chopped
- 1/2 Cup Chopped Green Onions
- 1/2 Cup Black Olives
- 1 1/2 Cups Grated Cheddar Cheese
- Dressing:
- 1 Cup Taco Sauce
- 1/2 Cup Olive Oil
- 2 tsp Seasoning Salt
- 2 tsp Dried Basil
Instructions
- Prepare pasta according to directions on package.
- Cook and cut sausage; dab off grease with paper towel.
- Mix dressing with a wire whisk.
- Combine ingredients in a large bowl.
So many ways to make your fiesta salad
We enjoy many variations of this salad, sometimes with corn, sometimes with hominy. Often we use multi-colored pasta and add red, yellow, and orange peppers to add color. We may include sliced olives. What will you try?
